Italian cooking is one of the world's greatest and most popular cuisines because of the tremendous variety of flavors and cooking methods. Underneath the tomato sauces and the tiramisu are the deep historical origins that these classic dishes have; most of them are hundred years old and even rooted from the Roman Empire.
The classic Italian meal is considered a celebration for traditional Italian families. The cook in the family, usually the mother or grandmother would take leisurely long hours to prepare several distinct courses. Then they would take an hour or two to finish and enjoy the meal with family members gathered around the table to talk, laugh and just spend time with one another.
The structure of the traditional Italian meal usually consists of five components namely antipasto, primo, secondo, contorno and dolce. Antipasto refers to something light to eat or drink before the meal. It can be a simple bruschetta, a caponato perhaps or just some marinated olives. And of course, they are famous for their cheeses like mozzarella, parmiggiano-reggiano and gorgonzola served with meat products like prosciutto and salami. Primo is the first course or appetizer where they usually have their carbohydrates. This is when pasta is served as well as other dishes like pizza, risotto, polenta and breads.
Secondo is the main course and usually consists of chicken, meat or fish. The portions are generally small and simple especially if a rich pasta served as the primo. Contorno refers to the platter of vegetables that usually accompanies the main course. This part of the meal highlights the simple goodness of the vegetables as they believe that it can shape and define the meal. Dolce or sweet is the finale for a traditional Italian meal; from biscotti, to tortes and custards maybe - to their famous desserts like gelato and tiramisu. They are known for ending the meals with creamy and rich textured desserts that are comforting and delectable.
The traditional Italian cooking is of greatest importance for them that they even considered each meal a work of art. They have tremendous passion for their food where they emphasized freshness, spontaneity and great flavors. They are just magnifico.
