Five Quick Southern Italian Recipes, for People in a Hurry

I am going to explain to you, how to make five, quick but authentic Southern Italian recipes. I am an Englishman living in Calabria, which is a Province, situated between Naples and Sicily, and these recipes were given to me by my Italian Mother in Law, who is an extremely good cook. The basic ingredients for most of these Recipes is Pasta, and a good virgin olive oil, and they are ready in less than fifteen minutes. You don't have to be a great cook to prepare these meals, but the results are not only tasty, but very healthy.
Pasta with Olive oil.
You really don't get much simpler than this, but for an Italian in a hurry, this is a great snack, to get you through the day. Any type of Pasta or spaghetti will do, and when it is cooked, just dribble some good extra virgin olive oil over it and eat. This meal is full of carbohydrates, and is tasty too. An alternative to the olive oil, is butter, which can be melted over the cooked pasta.
Pasta with Ricotta Cheese.
This is one of my favourite Pasta dishes and is so easy to make that a child could do it. Cook some Pasta, and then spoon in some ricotta cheese. Mix well and eat with a chilled white wine. Food doesn't get any simpler or better in my opinion
Rice Salad.
Boil about 100 grams of rice, drain and leave to cool. Add sweet corn, diced tomatoes, a soft cheese, grated carrot and rocket. Dribble with olive oil and serve.
Parma Ham with Melon.
Use some good quality Italian Ham, and peel and cube a melon. Rap the cubed melon in the ham and serve with grated carrot, rocket and mozzarella cheese.
Pasta with Salmon and Cream. (authors choice.)
Boil the Pasta of your choice, and when fully cooked, drain and return to the saucepan. Chop up some smoked Salmon and add to the pasta. Stir in some single cream and mix together. This dish is full of flavour and, if you get the right type of pasta, can be on the table and ready to eat in about six minutes. As an alternative to Salmon, I have tried it with prawns, or cod, and though not as nice, it still works well.
So there are some suggestions for quick Italian meals that don't take too much preparation, and are the genuine article when it comes to what Italians eat in their own homes. No frills, just great taste, and no preservatives.
